Sake Shokudo Toranomon Distillery's craft gin, COMMON, is based on island shochu produced in Tokyo's Hachijojima and Niijima, and soft water from the mountains of Sawai in Okutama, and is characterized by its clear, botanical flavour. For the white chocolate to go with it, Ishihara selected couverture, which pairs well with clear gin and allows you to fully enjoy the smoothness of the cocoa butter. He made repeated adjustments to maintain a balance between the sweetness of the chocolate and the flavor of the gin, achieving an equal balance between the two.
 
"I used a really delicious white chocolate with a subtle fruity cocoa flavor. I hope you enjoy the pleasant melt-in-your-mouth texture," says Ishihara. This is a special, limited-time raw chocolate that is packed with the respect and attention to detail that only a maker can have.
