~Valentine's Day 2021~ Chocolatier Palet d'Or, a specialty chocolate brand created by chocolatier Shunsuke Saegusa, who crafts authentic chocolate from cacao beans, will be releasing a variety of new products leading up to the 2021 Valentine's Day season. We will be showcasing the unique flavors that can only be achieved through homemade chocolate, including items that have been slowly aged over time and a collection that lavishly uses gorgeous champagne.

Fall 2019. Chocolatier Shunsuke Saegusa visited Ichiro Akuto of Venture Whisky, a whiskey brewery in Chichibu. He was impressed by the meticulous crafting of Ichiro's Malt, which has earned high praise both domestically and internationally and received numerous awards, using all five senses. He then used empty whiskey barrels he had received to fill them with a blend of cocoa beans, primarily from Belize, and aged them for a year. The chocolate, produced at a workshop in Kiyosato, Yamanashi Prefecture, is free of artificial flavorings and features a natural oak aroma and malt flavor hidden beneath the roasted cocoa aroma and subtle acidity. About Chef Saegusa Shunsuke>


He studied under the late Toshikazu Yasui, a leading figure in the world of Western confectionery, at the prestigious Hotel Plaza in Osaka.
In 1991, he went independent and opened his own patisserie. After meeting the late Maurice Bernachon, a master chocolatier from Lyon, France, and receiving his training as a chocolatier, he opened the authentic chocolate specialty store "Chocolatier Palet d'Or" in Osaka in 2004 and in Tokyo in 2007.
Then, in 2014, he started "Artisan Palet d'Or Kiyosato," a bean-to-bar workshop that handles the entire process from cocoa beans to chocolate.
In 2019, he opened the world's first bean-to-bar white chocolate brand, "Chocolatier Palet d'Or Blanc."
Handling more than 10 tons of chocolate per year, as a chocolatier he creates everything from cocoa beans to bonbons, and his exquisite chocolates, created with a focus on the original taste and aroma of cocoa, are completely original, homemade chocolates that have attracted widespread attention both in Japan and abroad.

The chocolatier, which opened in HERBIS PLAZA ENT (Nishi-Umeda, Osaka) in 2004 and in Shin-Maru Building (Marunouchi, Tokyo) in 2007, sells over 50 types of bonbons and chocolate gateaux.
In addition to original drinks and parfaits made with cacao, the salon offers a variety of ways to enjoy chocolate, including a cafe specially blended to go with the chocolate, chocolat chaud, bean-to-cocoa made with homemade cacao powder, and pairings of champagne and whiskey with chocolate.


<About Artisan Palet d'Or>
In 2014, the salon opened a workshop in the Kiyosato Plateau where cacao beans selected from around the world are roasted to the optimum temperature for each bean, and the entire process, from roasting to finishing the chocolate, is carried out in-house.

Bean-to-bar workshops where chocolatiers personally craft chocolate from the cocoa bean stage, with an annual production capacity of 10 tons, are rare worldwide and the first of their kind in Japan. Surrounded by the beautiful natural scenery of the Yatsugatake Mountains, the cool environment, similar to that of European mountain resorts, is ideal for storing cocoa and aging chocolate. This bean-to-bar workshop is unique to Chef Saegusa, who has worked with many chocolates over his 40-year career.

About Chocolatier Palet d'Or Blanc> Even among bean-to-bar manufacturers that handle everything from cocoa beans to chocolate, it is rare to produce white chocolate by pressing cocoa butter in-house. This brand was born from Chef Saegusa's strong desire to express a new world of white chocolate created from homemade cocoa butter. This shop is the world's first to offer a wide range of products, including white chocolate made with homemade cocoa butter, and baked goods, drinks, and soft-serve ice cream made from the homemade cocoa powder produced at the time.

The shop also has a glass-walled workshop where you can see the manufacturing process from cocoa beans to chocolate, as well as the process of squeezing the cocoa butter.
