The main dining room, TRUNK(KITCHEN), will be offering two special Christmas courses for four days only, on December 19th, 20th, 24th, and 25th. Our chef's exquisite dishes, using ingredients perfect for special occasions such as truffles, foie gras, and Japanese Black Beef fillet, are visually stunning. Spend Christmas with your loved ones in a restaurant decorated with Christmas-only styling to enhance the festive atmosphere.
 
The concept store TRUNK(STORE) will be selling Christmas cakes and roast chicken to decorate your Christmas table at home, as well as Christmas gift boxes that you'll want to give to your loved ones.
 
For Christmas cakes, we offer two original cakes, "The Avalanches" and "Toucha," developed by the TRUNK(HOTEL) pastry team led by Executive Pastry Chef Jean-Sébastien Clapi. "The Avalanches," which means "avalanche," has a wintery design reminiscent of falling snow. A citron madeleine base is topped with lychee panna cotta and a fruit rouge (red fruit) jelly accented with pepper, and is enveloped in a light rose mousse and ruby chocolate, the fourth chocolate from the French premium chocolate brand Cacao Barry. "Toucha," inspired by winter tea, features domestic yuzu ganache and domestic yuzu jelly enveloped in bittersweet matcha mousse, adorned with pistole (chocolate powder) for added texture. This dish boasts a refreshing yuzu aroma. "Roast Chicken," made with baby chicken marinated overnight in mineral-rich French salt and home-grown rosemary and herbs, is juicy and slightly spicy. Served with roast potatoes and Brussels sprouts, it's a perfect Christmas staple that pairs well with wine.
 
This Christmas gift box, filled with baked goods and dried flowers, is available in two sizes, large and small.
The baked goods were developed by the TRUNK(HOTEL) pastry team especially for this gift box. It includes "Beurre de Neige," a typical Christmas baked confectionery; "Madeleines," which fill your mouth with the aroma of black tea and lemon; "Financiers," an unusual combination of matcha and raspberry jam; "Chocolate Brownies," made with plenty of fragrant nuts; and "Mixed Fruit Pound Cake," inspired by stollen and filled with rum-soaked fruits. Each dried flower is designed by the TRUNK(HOTEL) floral design team. No two designs are alike, and each one is unique.

Originally from Lyon, Jean-Sébastien Clapié He studied pastry at Le Cordon Bleu in Paris and worked at Alain Ducasse's restaurant "Le Grill" in the Hôtel de Paris in Monaco. After coming to Japan, he showed off his skills at Pierre Gagnaire and other restaurants before becoming executive pastry chef at TRUNK(HOTEL) in 2018. His unique cakes, born from his high level of creativity, have captivated many people and have been featured in international media.
