The most important thing when making DEAN & DELUCA's original miso soup is the dashi broth. We have created a bowl that will allow you to rediscover the deliciousness of dashi, the foundation of Japanese cuisine and deeply rooted in the Japanese diet.

We have also paid particular attention to the ingredients that go well together, and have prepared three flavors: aosa seaweed, crab, egg and spinach, and clams and long onion. Grilled flying fish stock, made using the traditional fresh-grilling method from Hirado, Nagasaki Prefecture, is combined with sweet barley miso, which has a high proportion of koji (barley). The topping is simply a generous amount of seaweed from Ise Bay, creating a flavorful dish.

We use a complex, well-structured combination of dashi stock. The miso is made with a mellow, sweet rice koji miso (hana koji koshi), which brings out the texture and flavor of the crab filling and the soft, fluffy egg.

A basic stock made with high-quality bonito flakes and kelp is combined with a rich, flavorful Shinshu Country Miso, a blend of three types of miso. The ingredients include clams and spring onions, flavored with chopped ginger. The plump texture of the clams is also appealing.

We've selected the perfect miso and ingredients for each of our three types of dashi stock. Not only is it a great introduction to dashi stock, but it also allows you to enjoy its rich flavor, even on busy days, with ease.

Umaka Dashi Mix: A complex, well-structured dashi stock containing miscellaneous fish (mackerel and sardines)
Yakiago Dashi: One of Nakajimaya's signature dashi stocks. A dashi stock with an elegant taste and aroma
Umaka Dashi Bonito: A standard dashi stock made with bonito and kelp

2. Miso Selection
We selected miso that complements the regional characteristics of the dashi stock.

3. Ingredients
We've paid particular attention to the size of the ingredients, down to the millimeter, to create a satisfying, filling dish, and selected ingredients that will bring out the best in the dashi stock.
