Shu Food Planning Ltd. (Head office: Minato-ku, Tokyo; CEO: Kimura Shuichiro), a production company that creates enriching lifestyles through "food x good ideas," will open "Genso Kimura Yaki Hyakuryoya," a new and first-of-its-kind "anpan specialty store" in Tokyo, in the station-based shopping complex Gransta Tokyo, which opens on August 3rd.

The store is totally produced by Kimura Shuichiro, representative of Maison Kayser and a descendant of Kimura Yasubei, who created anpan in the Meiji era. Led by Kimura, the "Original Kimura-yaki Hyakuryoya" was born in collaboration with the development team at Shu Food Planning, a group of experienced bakers, chefs, and creators, and is the home of the "Tokyo Hyakuryo Anpan," a sweet bread shaped like 25 stacked gold coins.

One bite will put a smile on your face! Feel the joy in your mouth! Aiming for a new sensation of "luxurious anpan"
This luxurious anpan with a new sensation is made by carefully wrapping a special filling (anko/cream) from an original recipe that has been carefully researched and crafted into a rich dough that uses a luxurious amount of butter and eggs, taking into consideration the balance of sweetness and texture. We also paid particular attention to the base dough, using a generous amount of high-quality butter and eggs to create a moist, fluffy, and fragrant bread that is almost like a delicious pastry. For our signature "anko", we deliberately use "smooth bean paste". The reason for this is that at the time, smooth bean paste was considered the high-quality bean paste suitable for the imperial sweets that were cultivated in the Edo townspeople's culture. We chose "smooth bean paste" as a homage to this Edo tradition. It also pairs perfectly with our special bread, which is rich in butter and has a rich flavor. By combining our special bread made using traditional French bread recipes with smooth bean paste made using Edo-style Japanese sweets, we were able to create a retro-modern "anpan" that blends Japanese and Western styles. The surface of the bread is crisp and golden brown, while the inside is moist and chewy. When you bite into the bread and bean paste together, the moist and smooth bean paste permeates the many layers (cavities) inside the bread, creating a fizzy texture.

This oval-shaped "anpan" (bean bun) is 670mm long, 500mm wide, and 220mm thick, and resembles the 25 ryo (rice wrapped in gold) coins stacked on top of each other.
At the time of opening, we will offer two signature flavors: "smooth bean paste" and "cream."
Utilizing our unique manufacturing methods, we have developed new products, from seasonal limited edition items to new staple items, while listening to customer feedback, such as matcha-flavored dough, dough incorporating nuts, and bean paste fillings ranging from sweet to savory. At the time of opening, we will offer two signature flavors: bean paste and custard cream. We will gradually release various products depending on the season.

JR East Group's Railway Hall Co., Ltd. opened the in-station commercial facility "Gransta Tokyo" on August 3, 2020. 66 stores will open in the newly expanded space created by the development of the area around Tokyo Station's north passage. Together with the 88 existing stores, this will be JR East's largest in-station shopping complex, with over 150 stores and an area of approximately 11,300 square meters.
