Grand Hyatt Tokyo, a dynamic luxury hotel towering above the hustle and bustle of the city, is collaborating with the "Delicious Ukiyo-e Exhibition: Tastes of Edo Depicted by Hokusai, Hiroshige, Kuniyoshi, and More" (Mori Arts Center Gallery, Roppongi Hills Mori Tower, 52nd floor), which opens on July 15, 2020. The hotel will offer menus that combine Edo-period food culture with modern ingredients, as well as dishes that recreate Edo-period culinary culture, such as sushi and tempura, which frequently appear in ukiyo-e prints. Additionally, the first 800 customers who order the following menu items in the hotel will receive a complimentary admission ticket to the exhibition (some stores may be excluded). The Oak Door, a steakhouse that dynamically prepares carefully selected ingredients, offers a gourmet burger made with matcha, a flavor that has been popular since the Edo period. This special burger, created with the unique perspective of a foreign chef, features a 100% US prime beef patty, lettuce, tomato, teriyaki sauce, mayonnaise, green onion, and pickled ginger, sandwiched between buns infused with plenty of matcha. The burger is available in two sizes: a giant size measuring 23cm in diameter and a regular size.

This frozen cocktail is an adaptation of matcha-flavored shaved ice, a luxury item coveted by commoners during the Edo period. It uses Japanese craft vodka "HAKU" as its base. Combined with milk, cream, and red bean paste, it is a refreshing drink that will give you a taste of summer a little early.

・Red Fuji 1,700 yen
A cocktail inspired by Katsushika Hokusai's Red Fuji. This drink combines Yamazaki plum wine with whiskey, cranberry juice, and pineapple, creating a perfect combination of the rich aroma of the whiskey and the tartness of the plum and cranberry.

・Kashiwamochi 2,000 yen
A cocktail that is an adult take on the classic Japanese sweet of Children's Day, Kashiwamochi. A different fruit is combined each month with Zubrowka, which has a mugwort-like scent, and the drink uses a milk wash technique to create a soft color and mellow flavor.

Rokuryoku (6th Floor Edomae Sushi)

At Edomae Sushi "Rokuryoku," where you can enjoy seasonal nigiri sushi prepared by skilled artisans, we offer nigiri sets that authentically recreate sushi, which was sometimes called fast food during the Edo period, using the ingredients and cooking methods used at the time. In the days before refrigeration, fish was not eaten raw; instead, each ingredient was painstakingly prepared by scalding and marinating it in vinegar. The tuna is lightly blanched and then dipped in a special sauce, while the whitebait is steamed in sake and topped with a slightly sweet shrimp oboro. The plump steamed conger eel, an essential ingredient in Edomae sushi, is finished with a special tsume vinegar. The vinegared rice is made with "Yukiwakamaru" rice from Yamagata Prefecture, known for its firm grains and chewy texture, blended with fragrant red vinegar and sweet rice vinegar. The castella-style omelet, a sushi restaurant staple, is branded with an original stamp from the "Delicious Ukiyo-e Exhibition." "Sushi" was fast food in the Edo period, and eating slowly may have been taboo at the time, but each and every piece of nigiri is painstakingly prepared. Please enjoy.

Introducing an original ukiyo-e lunch menu that fuses traditional vegetables from the Edo period with modern ingredients


At Keyakizaka, where you can enjoy fresh, seasonal ingredients carefully selected from local sources in a lively teppanyaki setting, we are introducing a special course that combines traditional "Edo Tokyo vegetables," vegetables that have supported people's diets since the Edo period, with modern ingredients. The luxurious menu includes a baked wrap of seasonal fish and Edo Tokyo vegetables, as well as deep, flavorful sauteed foie gras and sirloin of our original Japanese Black Beef, "Keyakizaka Beef." The wrapped fish is steamed on a hot iron plate until it is plump and tender, and the broth from the vegetables is packed with flavor, releasing a burst of aroma as soon as you open the wrapper. Enjoy it with the fragrant truffle and onion sauce. For dessert, we offer a plate of Keyakizaka's special dorayaki pancakes, baked on an iron plate, and matcha ice cream. The dorayaki, filled with a subtly sweet bean paste made from Hokkaido red beans, will be branded with an original stamp from the "Delicious Ukiyo-e Exhibition." "Delicious Ukiyo-e Exhibition: The Flavors of Edo as Depicted by Hokusai, Hiroshige, Kuniyoshi, and More"


The exhibition will be held from Wednesday, July 15 to Sunday, September 13, 2020, at the Mori Arts Center Gallery on the 52nd floor of Mori Tower in Roppongi Hills, where the Grand Hyatt Tokyo is located. Tracing Edo food scenes depicted in ukiyo-e, the exhibition will explore the appeal of ukiyo-e prints themselves and the Edo food culture that connects to modern-day life. It will also introduce the actual cooking methods that existed at the time through photographs of recreated dishes and explanations of the recipes.
