Following on from the matcha terrine, the second installment in Gion Tsujiri's premium series is a supreme rare cheesecake that contrasts the deep flavor of the savory and astringent matcha that fills your mouth with the refreshing taste of rare yuzu. It uses Gion Tsujiri's signature stone-ground Uji matcha, as well as yuzu grown in Mizuo, Kyoto, and high-quality cream cheese made from high-quality raw milk from Tokachi, Hokkaido, to achieve a balance of rich flavor and tartness.
