
At two directly managed hotels of Hotel New Otani (Tokyo and Makuhari), pastry shop "Patisserie Satsuki" will be selling a new dessert called "J Panettone," which is based on the recipe of the traditional Italian dessert "panettone" and is finished using domestic ingredients and artisanal techniques unique to Japan.
The production process takes an astonishing five days! A "reward bread" that is an adaptation of a traditional Italian dessert using ingredients unique to Japan.

"Panettone" is a traditional dessert said to have originated in Milan, Italy, the land of gourmet food. It is a dome-shaped bread made with a soft dough that is fermented and matured using plenty of butter and egg yolks, mixed with raisins and other dried fruits, and has long been loved by Italians as a staple for Christmas and other celebratory occasions. "J Panettone" is a new "reward bread" in which Hotel New Otani's Grand Chef Nakajima Shinsuke has reinterpreted this traditional Italian dessert using ingredients unique to Japan.

Natural yeast containing Kuzumochi Lactic Acid Bacteria(R), a lactic acid bacteria derived from Kuzumochi, made by Funabashi-ya, a long-established store founded in 1805, is added to a special panettone dough made with plenty of butter and egg yolks, and left to ferment for approximately 20 hours. By carefully carrying out the preparation, baking, and resting processes over a period of approximately five days, the resulting bread is moist, melts in the mouth, and rich in flavor, while maintaining a fluffy and elastic texture. The surface is sprinkled with pearl sugar and batter to give it a crispy texture. The inside of the panettone is luxuriously filled with rum raisins, a staple of panettone, as well as Hakata Amaou® confit and Belgian chocolate chips. Enjoy this premium panettone, "J Panettone," as a dessert when spending time with friends and family.
