[2023 Christmas Cake] Aman Tokyo's Christmas cake made with ingredients carefully selected by the Executive Pastry Chef

Aman Tokyo (Otemachi, Tokyo) will be selling original Christmas sweets for 2023 at its pastry shop, La Pâtisserie by Aman Tokyo, located on the second basement floor of OOTEMORI. This year, three types of sweets will be available: "Charlotte," a combination of pistachio and strawberry; "Concorde," a mellow confectionery made with cognac; and "Stollen," a classic Christmas baked confectionery.

Reservations will begin at 11:00 AM on November 1st, with sales starting December 1st. ■ "Charlotte"

"Charlotte" takes its name from the phrase "a cake made of biscuit in the shape of a lady's hat." It is topped with a layer of domestic strawberries and fragrantly roasted Sicilian pistachios, and you can enjoy a design unique to this season in vibrant Christmas colors. A white chocolate and pistachio mousse sandwiched with a berry jelly and decorated with a carefully baked oval biscuit. Its rich flavor, enjoyed by children and adults alike, and its gorgeous, elegant appearance will add a touch of color to your Christmas party. ■ "Concorde"

"Concorde," a cake said to be inspired by the cobblestones of the Place de la Concorde in Paris, France, will be available as a pre-order only item. This year, Aman Tokyo's original "Concorde," created by Miyagawa, is a Christmas cake with a sophisticated flavor, featuring chocolate mousse infused with plenty of cognac, enveloped in slightly bitter cocoa meringue. Enjoy the contrast in texture between the light and crispy meringue and the moist, rich chocolate mousse, as well as its rich, mellow flavor.

■AMAN TOKYO Original "Stollen"

This year, we will be offering two sizes of "Stollen" made with "Harukirari", an organic wheat grown naturally in Tokachi, Hokkaido, which Miyagawa personally selected. The dough, which fully captures the flavor of "Harukirari", is kneaded with figs stewed in red wine, raisins, walnuts from Shinshu, and peanuts from Kujukuri Beach, Chiba Prefecture, which are grown without pesticides or chemical fertilizers, and then baked to a light texture. In Europe, stollen is a traditional baked confectionery that is traditionally sliced thinly and eaten little by little in the run up to Christmas, enjoying the changing flavors. Why not give stollen as a Christmas gift to someone special?

Executive Pastry Chef, La Pâtisserie by Aman Tokyo
Yoshihisa Miyagawa
After training in France, he worked in confectioneries and the pastry departments of luxury hotels in Tokyo. Since the hotel's opening in 2014, he has served as pastry chef at Aman Tokyo, overseeing all of the hotel's pastries, including desserts at its three dining establishments and chocolates and cakes for gift items. He also led the pastry department at Aman Yangyun in Shanghai within the Aman Group, and held Aman pastry chef masterclasses at Amanpuri. La Pâtisserie by Aman Tokyo, which opened in October 2021, offers Miyagawa's chic baked goods, popular cakes with classic and delicate flavors, and freshly baked bread.
