This pate de campagne is made using SPF germ-free pork from Sato Livestock in Ibaraki Prefecture. By deliberately mixing in chicken liver instead of pork liver, we have been able to reduce any strong flavor or odor and bring out only the umami.
Pork and chicken liver are minced after being marinated overnight in alcohol and spices, mixed with aromatic vegetables and eggs, and packed into a terrine mold. It's then slowly baked in a water bath at a low temperature for two hours, resulting in a moist and tender pâté that locks in all the flavor. Enjoy the taste of an authentic French restaurant at home. Serve with mustard. It's also delicious with fig, prune, or blackcurrant jam.
