The "Premium Mont Blanc" allows you to fully enjoy the natural sweetness and rich flavor of chestnuts.

The Premium Mont Blanc is an ultra-thin pâté filo pastry baked to a crisp with almond cream, topped with Mont Blanc cream made from a blend of subtly sweet French Chataigne d'Ardeche chestnut paste and fragrant Japanese chestnut paste, creating a dish that embodies the marriage of Japanese and Western flavors. The rich Mont Blanc cream is enhanced with smooth, gentle custard cream and rich fresh cream, further enhancing the natural sweetness and aroma of the chestnuts.

Sweet potato compote and domestically grown chestnuts in their skins are also added to create a different texture and a rich chestnut flavor. Chef Patissier Yao Tsunanori
He worked as a sous chef at The Capitol Tokyu Hotel for around seven years, where he gained experience in a wide range of tasks, mainly making wedding cakes and chocolate crafts. He also worked at RIZAP COOK Ginza for around three years as a cooking class trainer, teaching customers how to cook and make sweets. He also taught confectionery classes as the head at Tokyo Sweets & Café College, mentoring and nurturing students in high-quality techniques and knowledge. In April 2022, he was appointed chef patissier at Hotel InterContinental Tokyo Bay. He strives every day to surprise customers with cakes that will impress them and to create high-quality sweets that do not allow for compromise.

Located on the 1st floor lobby, The Shop N.Y.
