To welcome early summer, The Living Pavilion by Aman at Aman Kyoto (Kita-ku, Kyoto) will be offering "The Art of Mango," a limited-time offering from Monday, May 8, 2023. This artistic mango parfait combines juicy tropical mangoes with the essence of Kyoto. This parfait, reminiscent of a jewel box of artwork, offers a variety of flavors of mellow mango, creating a feast for all senses. Enjoy an elegant afternoon in the forest garden bathed in the early summer sunshine.

Executive Pastry Chef Hiroyuki Matsuo's desserts, designed to reflect the changing seasons and their ingenious and delicate beauty, have proven popular every season. As the green maple leaves sparkle this season, we're introducing "The Art of Mango," a new mango parfait that's like a mango trapped in a glass jewelry box. Fresh mangoes, as well as various other mangoes, are scattered throughout the glass, including sorbet, jelly, chocolate, and chips.

The lid of this parfait, made with a monaka wafer, is Matsuo's special design. The lid is delicately decorated with mango chips, candied peel, white chocolate, and gold leaf. Opening the monaka wafer reveals a beautiful, petal-like tube of mango tuile. Inside, mango, Kamigamo herbs from Kyoto, and two types of homemade sorbet are lined up, all wrapped in a soft espuma made with salt from Kotohiki, Kyotango. Layered with fresh mango, smooth crème patisserie, mango and lemon jelly, crumble with a delightful texture, and tart fromage frais, the sweetness of the mango spreads with every bite, creating an exquisite balance.
Jelly and air-in chocolate are hidden inside the stick-shaped meringue and Matsuo's special mochi lid, ensuring you can enjoy it until the very last bite. You can enjoy two savory dishes and as many drinks as you like from a selection of over 20 types. As a confectioner, he is also skilled in creating displays, and has won awards such as the Osaka Governor's Award and Grand Prize in decorative and decorative confectionery contests. He has served as executive pastry chef at Aman Kyoto since its opening in 2019, and his popular afternoon tea of Western sweets modeled after Japanese sweets has been a feast for the eyes and mouths since the restaurant opened.
