■What is "Galette des Rois"?
In France, this traditional pastry is an essential part of the New Year, with pastries and bakeries lining up for sale as soon as the new year arrives. This baked confectionery is made by wrapping crème d'amandes, a rich, sweet almond pastry, in a flaky pastry crust. Inside is a ceramic charm called a "fève." It's said that whoever finds it when they slice it will be blessed with good fortune for the year.

■Joël Robuchon's Attention to Detail
This confection combines an almond dough generously infused with rare Tahitian vanilla with a pie crust made from rich cultured butter. Robuchon's philosophy of maximizing the flavor and taste of the ingredients, while remaining simple, is embodied in this confection.

■An Original Ceramic Fève Available
Each year, the fève is inspired by a dish from the restaurant. This year's design is "Pan-fried Lobster with Herb Salad," a dish from "L'Atelier de Joël Robuchon." The back is printed with "2023."
