THE THOUSAND KYOTO, the flagship hotel of the Keihan Group, will be offering a new menu incorporating seasonal ingredients, "Hamo, Matsutake Mushroom, and Beef Kaiseki," at its Japanese restaurant KIZAHASHI, for a limited run of 50 meals from September 1 to October 30, 2022.

The "Hamo" is made from the last of the "nagare" conger eels, which are in their second season of the year and are at their peak of fattening. The menu includes conger eel sushi, which is carefully deboned and grilled in a special KIZAHASHI original blend sauce. Matsutake mushrooms are used abundantly as the main course of this kaiseki meal. Grilled, steamed, fried, and other cooking methods are used to surprise and delight guests. Enjoy a variety of flavors, including earthenware pot steaming, which combines KIZAHASHI's signature dashi broth with the mellow aroma of seasonal matsutake mushrooms. The beef is made with domestic sirloin and served Yoshino-style.

Cooking at low temperature in the first dashi stock brings out the refined flavor, allowing you to appreciate the delicate taste of Japanese cuisine.
