Aman Tokyo (Otemachi, Tokyo) will be selling the Aman Tokyo Original Valentine's Chocolate 2022 (boxed set of 5, 3,240 yen/tax included) for a limited time from January 30th to February 14th, 2022, at La Pâtisserie by Aman Tokyo, which opened in October, and at the Aman Tokyo online shop. In addition, the new chocolate cake, Terrine Chocolat (3,400 yen/tax included), will be available until March 14th to coincide with Valentine's Day and White Day. Please consider giving this chocolate, lovingly prepared by Executive Pastry Chef Miyagawa Yoshihisa, as a gift to someone special. 
 

 
Aman Tokyo Original Valentine's Chocolate 2022
Aman Tokyo Executive Pastry Chef Miyagawa, who has a long history of working with chocolate and is well-versed in its characteristics, has carefully selected chocolate made with cocoa beans from Ecuador, Peru, Madagascar, and other countries, and combined it with Japanese ingredients.
 
The vibrant green chocolate combines caramel with a hint of sudachi (citrus fruit) from Tokushima with a ganache made from a blend of tart Brazilian bitter chocolate and milk chocolate. The orange-colored chocolate, spiced with fragrant Asakura sansho pepper, has a refreshing taste when combined with mango pâté de fruits. To bring out the aroma of Japanese pepper, we've combined it with classic French extra-bitter chocolate (61% cocoa), and coated it with milk chocolate for a gentle texture while still allowing the spices inside to shine through. Four other flavored chocolates are available, including one that perfectly balances ganache, naturally flavored with mint from Kitami, Hokkaido, with sweet and sour raspberry jam, and another that combines the rich flavor of roasted green tea with the crunchy texture of hazelnut praline. Finally, we've added the Aman logo chocolate, a specialty of ours since our founding, blending chocolate from Ecuador with chocolate from Madagascar, characterized by its red fruit and banana flavors. This chocolate box offers a total of five flavors to enjoy.

Au Chocolat
Introducing au Chocolat, a type of classic chocolate cake. The recipe is simple, using Miyagawa's carefully crafted original blend of Indonesian chocolate, fertilized eggs, cane sugar and butter. The ingredients are carefully mixed and steamed before being coated with pure cocoa powder. We created this chocolate terrine with care, so that you can fully enjoy its smooth texture and rich, moist chocolate flavor. The chocolate terrine will be available until Monday, March 14th as a limited-time item for Valentine's Day and White Day 2022.

After training in France, Miyagawa Yoshihisa worked in the pastry departments of confectioneries and luxury hotels in Tokyo. Since the hotel opened in 2014, he has served as pastry chef at Aman Tokyo, overseeing all of the hotel's pastries, including desserts at its three food and beverage facilities and chocolates and cakes for gift items. Since its opening, The Lounge by Aman's afternoon tea has been acclaimed for its original and elegant offerings. Within the Aman Group, Miyagawa also led the pastry department at the launch of Amanyangyun in Shanghai and held masterclasses with Aman's pastry chefs at Amanpuri. La Pâtisserie by Aman Tokyo, which opened on October 1, offers Miyagawa's chic baked goods, popular cakes with classic and delicate flavors, and freshly baked bread.
