In preparation for the holiday season, TRUNK(HOTEL), a boutique hotel in Jingumae, Shibuya Ward, will begin accepting reservations from October 21, 2021, for Christmas cakes, Christmas hors d'oeuvres, and roast chicken that will add a touch of elegance to your Christmas table at home. The menu lineup will provide a comprehensive package for creating a wonderful party scene with family and friends.
 
Two Types of Christmas Cakes Created by Our Executive Chef Pastry Chef
Christmas cakes, the centerpiece of your Christmas table, are two types of cakes inspired by "winter forests" developed by the TRUNK(HOTEL) pastry team led by Executive Chef Pastry Chef Jean-Sébastien Clapié.
"Fort noire," which means Black Forest in French, is a chocolate cake inspired by the lush mountain slopes. The chocolate cake is made with roasted sesame seeds and is enveloped in vanilla cream and dark chocolate mousse. In the center, a violet-flavored red fruit jelly adds a touch of acidity, harmonizing with the bitterness of the dark chocolate to create a delicate flavor.
"Fort blanche," meaning white forest, is a chestnut cake with a mousse that harmonizes the tartness of fromage cream and the rich depth of chestnut mousse, and the fresh sweetness of pear spreads throughout. The cake, accented with a moderately bitter coffee flavor, has an addictive texture of caramel and orange cookies. The four flavors - sour, bitter, umami, and sweet - are expressed in the theme colors of red, green, white, and yellow, reminiscent of Christmas. Each of the four theme colors consists of four hors d'oeuvres made with luxurious ingredients befitting the holiday season.
