■About the legendary steakhouse "Peter Luger"

Founded in 1887, Peter Luger has popularized dry-aged beef steaks around the world and is known as the pinnacle of renowned steakhouses. It is a long-established steakhouse that has been ranked highly for over 30 years in the Zagat Survey, a rating service conducted by general guests, as well as the Michelin Guide.

■ Signature Dish: T-Bone Steak

When it comes to Peter Luger, the T-bone steak comes to mind, available in both filet and New York strip (sirloin) varieties. Made with the finest prime beef graded by the United States Department of Agriculture (USDA), Peter Luger Tokyo is carefully selected and purchased by discerning chefs appointed by the owner. Chilled meat is air-shipped and aged for over 28 days in a dedicated aging room using a unique aging method. Aging enhances the flavor and aroma and makes the meat even more tender. Once the meat is fully aged, it is cut around the edges, sprinkled with salt, and then grilled in a dedicated broiler to lock in the flavor. The meat is cut into bite-sized pieces, placed on a plate with melted butter, and placed back in the broiler for a few minutes before being brought to the guest's table. After this lengthy process, the steak is served, and the more you chew it, the more delicious it becomes, resulting in a one-of-a-kind flavor.

■Key Points of Beef
1. Beef purchased with a unique perspective

The beef used for steaks is selected by connoisseurs who have inherited Peter Luger's unique meat selection method, which has been passed down since the company's founding. Connoisseurs are also dispatched to the beef processing plant to purchase the best beef before it hits the market.

2. Confidential Aging Know-How
Peter Luger has its own unique aging know-how that has been passed down for 130 years. There is top-secret know-how regarding temperature, humidity, and aging rooms, and we have inherited this technology and are replicating it at Peter Luger Tokyo.

3. Chilled Air Transport
Our beef, purchased by our expert craftsmen, is shipped chilled by air once a week. While beef is generally imported by sea, we insist on shipping it chilled by air so that it has the same aging period as in New York.

■Initiatives unique to Tokyo
1. Phoneless
Peter Luger Tokyo will be introducing "LINE AiCall" to achieve a phoneless experience. AI will automatically answer phone reservations and reference real-time seat availability information to complete reservations 24 hours a day. Reservations, which were previously only possible online, can now be made over the phone, helping to prevent missed reservations. Furthermore, by reducing phone reception work, we plan to use the time saved to improve our service level.

2. Cashless
Peter Luger Tokyo will not accept cash payments in order to achieve a cashless operation. For several years, we have been considering cashless payment to reduce the hassle and prevent accounting errors. Supported by the contactless movement brought about by the COVID-19 pandemic and the "contactless payment" service on the reservation portal site "Table Check," which allows customers to pre-register their credit card information and automatically charge their card after use, we are now able to achieve a cashless operation. Payment methods accepted at checkout include credit card, electronic money, and QR code payments.

3. Boutique

The Tokyo store will feature an original boutique not found in New York. It will sell T-bone steaks, rib-eye steaks, hamburger patties, and other items aged in the aging room. There will also be a lineup of hearty American desserts, as well as private-brand steak sauce, wine, and coin chocolates to enjoy in the dining room. Logo-printed merchandise such as T-shirts and bags, perfect as souvenirs, will also be available. Other items selected by Peter Luger will also be available, including olive oil, salt, and pepper to use with meat dishes.

■A theater-style layout with a brick exterior reminiscent of the Brooklyn flagship store

Image of the 1st floor barThe three-story building with brick exterior walls incorporates elements of Brooklyn, New York, where the flagship store is located. There is a bar on the first floor where you can enjoy meals and cocktails. There is also a boutique where you can purchase takeout items and gift items. Up on the second floor is an open dining space with a 6-meter ceiling. At the back, there will be an open kitchen with a lively atmosphere not found in New York. The third floor has a theater-style layout so that diners can dine on the second floor, like they are sitting on a balcony, overlooking the dining area on the second floor.

Dining image on the second floor: There are seven private rooms, large and small, which can be used depending on the occasion. A professional designer from New York has been hired for the lighting design, and the interior has been finished to bring together all elements, including customers and food.
