From everyday meals to special occasions, we have deli dishes that you'll want to eat in every situation. We'll be introducing six topics, including the revamped standard menu items supervised by Chef Fumio Yonezawa of The Burn, a grill restaurant in Minami-Aoyama, Tokyo.



NEW DELI "The Burn" Completely Revamped by Chef Fumio Yonezawa

A fresh take on classic dishes under the supervision of Chef Fumio Yonezawa, head chef of the grill restaurant "The Burn" in Minami-Aoyama, Tokyo. With the addition of the "Plant-Based" category, the flavor and service of our deli dishes have been further improved. Chef Yonezawa's experience in hospitality across diverse food cultures, as well as his knowledge of ingredient selection and cooking, cultivated both in Japan and abroad, are poured into our deli dishes. In April, select stores will host a buffet where customers can enjoy these dishes. The chef will also be making an appearance. Stay tuned!

Fumio Yonezawa
After training at an Italian restaurant in Ebisu, he moved to the United States at the age of 22. He served as the first Japanese sous-chef at the three-star restaurant Jean-Georges in New York, where he catered to customers with diverse diets. In the fall of 2018, he opened the grill restaurant The Burn in Tokyo's Aoyama district. His book Vegan Recipes (Shibata Shoten) is also his expertise in finding delicious ways to eat vegetables.

SEASONAL RECOMMENDATION: Introducing deli dishes that will bring spring to all five senses



A menu featuring unique bitter and sweet flavors, and the colorful combination of ingredients, will allow you to experience spring with all five senses. Taking advantage of the appeal of seasonal ingredients, we create a variety of overlapping flavors and textures within a single dish. Please try one first.


1. Roast beef and spring cabbage salad with kinome wasabi sauce 670 yen (tax included)/100g
Enjoy this refreshing sauce based on spring bell peppers, with the aroma of kinome and wasabi. The seasonal snap peas and rape blossoms are simply steamed.


2. Red Sea Bream and Green Peas with Sun-Dried Tomato Marinade 626 yen (tax included) / 100g
Plump deep-fried red sea bream is layered on a plate with marinated red onions and sun-dried tomatoes. This allows you to enjoy the deliciousness of each ingredient, and the flavors of each ingredient marry together in your mouth.


3. White Asparagus and White Kidney Bean Mimosa Salad 670 yen (tax included)/100g
Accented with the refreshing acidity of orange. A salad with plenty of boiled spring vegetable white asparagus and plumply cooked white kidney beans, this salad is also fun to eat.


4. Duck and Broad Bean Tagliata with Ravigot Sauce 950 yen (tax included)/100g
Sliced roasted duck. Add plenty of spring onions, sun-dried tomatoes, and wild garlic, and sprinkle with Parmigiano-Reggiano. The vibrant broad beans add a touch of spring to your table.


NEW MAIN DISH Everyday Main Dishes



We've lined up four meat main dishes, featuring familiar dishes like hamburgers and fries, but with creative ingredient combinations and seasonings. The "Spring Vegetable Butterbur Miso Hamburger (pictured above)" is made with coarsely ground meat for a juicy finish that complements the distinctive bitterness of butterbur miso. This dish is perfect for both alcohol and rice. Why not make it the star of tonight's dinner?
