Referred to as the "Picasso of the Pastry World" by American Vogue magazine, Pierre Hermé is a cutting-edge pastry chef who has overturned conventional concepts of sweets. This year marks the 23rd anniversary of the opening of the world's first pastry boutique bearing his name at Hotel New Otani. The "world of taste, sensibility, and delight" envisioned by this genius pastry chef has influenced the food culture of Hotel New Otani, and Pierre Hermé has collaborated with him on various projects, including the development of macarons incorporating Japanese ingredients and flavors, and the provision of a full-course menu personally curated by him at the hotel's restaurant.
Nakajima Shinsuke
Grand chef of Hotel New Otani. In 2002, he won the overall prize as a member of the Japanese national team at the World Pastry Championship.
