Maruyama Coffee Co., Ltd., founded in Karuizawa in 1991 and offering carefully selected specialty coffee, and Base Co., Ltd., a Japanese chocolate specialty store that proposes new ways to enjoy chocolate, have once again taken on the challenge of developing a coffee chocolate with a new approach in 2021 as the second installment of the Minimal x Maruyama Coffee collaboration product ``Eating Coffee,'' which was well received in 2019.

This year, two new products from Taberu Coffee will be available: "Cafe Chocolate Cafe Latte" and "Cafe Chocolate Macchiato", which will be released on January 30th, 2021.

The only product that marries single-origin (single-region) "beans" from Nicaragua.
We have developed two types of coffee white chocolate by combining cocoa butter extracted from single-origin cocoa beans from Nicaragua with single-origin coffee from Nicaragua. Both cocoa beans and coffee beans are the seeds of tropical fruits that grow directly under the equator. We have created a unique product by combining "beans" from the same region.

The concept is "edible coffee."


The "transience" of coffee, which changes depending on brewing method and temperature, is imprinted on the canvas of chocolate.
By adjusting the recipe by changing the amount of cocoa butter and coffee, the process, and the degree of roasting, and conducting repeated tastings, the two professionals, Maruyama, president of Maruyama Coffee, and Yamashita, president of Minimal, pursued an aroma and flavor that they could both agree on. Their focus was to imprint and recreate on the canvas of white chocolate the "transience" of coffee's flavor, which changes depending on the brewing method and temperature. The sweetness of the chocolate spreads the moment you take a bite, and the coffee flavor unfolds as the aftertaste progresses. The flavor changes from the moment you take a bite to the aftertaste, making this a product that truly embodies "edible coffee."

About the collaborative products "Cafe Choco Cafe Latte" and "Cafe Choco Macchiato"
The coffee concentration was tested in 1% increments to find the optimal level. Ultimately, two types were prepared: "Cafe Latte (5% coffee)" and "Macchiato (15% coffee)."
