In France, Galette des Rois is a traditional baked confection enjoyed on the Epiphany festival, and is a beloved staple on New Year's tables. It's said that anyone who finds a lucky fève (almond) hidden inside the pie piece will be crowned and blessed by everyone around the table, ensuring a happy year. At RITUEL, rich almond cream is enclosed in pie crust made with generous amounts of French butter. Enjoy the taste that exudes a "royal" elegance precisely because of its simplicity. Boulangerie RITUEL, which means "habit/ritual" in French, is a viennoiserie shop that was founded in 2015 and opened its Aoyama flagship store in November of the same year. The shop offers bread made with carefully selected ingredients, such as carefully selected wheat, free-range eggs from Kurofuji Farm in Yamanashi, milk from Hokkaido, and seasonal fruits from each season.
Using good old traditional French bread-making techniques, all processes except for kneading the dough are done by hand, while carefully adjusting the dough's temperature, moisture content, elasticity, etc.
