Jun 22, 2017
The Kamiyamacho/Tomigaya area, stretching from Shibuya Station through Bunkamura Street to Yoyogi-Hachiman Station, is a gourmet area known as "Oku-Shibuya." In one corner of this area, you'll find CAMELBACK sandwich&espresso, a hot favorite among bread lovers. Run by barista Suzuki and sandwich maker Naruse, friends since high school, this cozy coffee stand is home to a coffee and egg sandwich combo. Discover the secret behind this unique sandwich, beloved as a takeout lunch or snack.

"When I was working as a sushi chef in America, I wondered, while sushi is a dish that promotes the eating of rice, what kind of dish would make bread taste delicious? This made me want to open a sandwich shop if I were to ever go independent. I thought that the delicate taste buds and cooking techniques of the Japanese could be applied to making sandwiches. After that, when I returned to Japan, I continued my training at a sushi restaurant, but I wondered if it would be a good idea to go back to America, where sushi is not well-regarded, and whether I should compete with sandwiches. With this in mind, I continued to eat bread around town, and came across a bread that made me think, 'I can make a great sandwich with this,' and the concept for the shop was solidified, and I decided to open this shop," says Naruse. Fascinated by the deliciousness of Japanese bread, Naruse purchases bread every morning from three bakeries: Katane Bakery (Yoyogi-Uehara), 365 Days (Yoyogi-Hachiman), and Tarui Bakery (Sangubashi). He then proposes sandwiches with fillings that match the unique characteristics of each baguette. This is how the bread-driven sandwich was born.

The "Sushiya Tamago Sandwich" (380 yen) is a thick omelet made using a secret recipe passed down from his days as a sushi chef, sandwiched between a Katane Bakery roll. "The key is the unique chewy texture, created by blending glutinous wheat grown in Kuwana, Mie Prefecture," says Naruse. The moment you bite into it, the sweetness of the omelet and the spiciness of the mustard spread in your mouth in a balanced way, along with a moderate bounce. The combination of the butter and mustard spread on the lightly toasted bread is also astounding! The most popular item is the "Brie, Apple, and Honey Harmony" (single size/¥800), a sandwich made with a slightly tart Tarui Bakery baguette. The crunchy texture of thinly sliced apples, rich Brie cheese, and honey infused into the baguette create a perfect match, making it a favorite among women.

The delicious sandwich is best complemented by Suzuki's "Camel Black" coffee (¥380). "Many women like lattes, but the sweet egg sandwich pairs perfectly with a refreshing black coffee. We use a unique brewing method to reduce harshness and bitterness," says Suzuki. It's certainly smooth, and even those who don't usually drink black coffee should try this one, thanks to its refreshing taste and aroma.
