Pierre Hermé, a leader in the world of patisserie in the 21st century, uses his playful creativity and unwavering technique to create an array of sweets loved around the world, and continues to build a "world of taste, sensibility and delight." This collaboration will feature Pierre Hermé Paris' signature and ever-popular macaron pastry, "Ispahan," as well as specially selected macarons, the "Emotion Hommage" glass dessert with a rich chestnut flavor, and "Satine" scones, one of Pierre Hermé Paris's most popular flavors. Additionally, Executive Pastry Chef Takashi Suzuki and Executive Chef Olivier Rodriguez have created sweet and savory dishes to complement these items, resulting in an afternoon tea experience that can only be enjoyed at this hotel. In a 27-meter-high atrium space high above Shinagawa, guests can enjoy a sophisticated tea time, fully immersing themselves in the world of afternoon tea created by Pierre Hermé Paris and The Strings Hotel Tokyo InterContinental.
 
"Ispahan," a signature item of Pierre Hermé Paris, is an item that symbolizes the "joy of the senses." The vibrant flavor of lychee, enhanced with refreshing raspberries, is exquisitely blended with the meltingly sweet rose cream, creating a masterpiece that allows you to fully enjoy the perfect harmony.
 
The macaron chosen to commemorate this afternoon tea collaboration is called "Jardin Andalou," and has a passionate flavor reminiscent of flamenco, a style that originated in Andalusia, Spain. This exquisite pairing features mandarin-flavored olive oil ganache and fruit rouge compote. The exquisite flavor of mandarin orange is freely expressed in the olive oil cream, while various red fruits create a vibrant taste. Born into a family of Alsatian pastry chefs that has been in business for four generations, Pierre Hermé began his apprenticeship under Gaston Lenôtre at the age of 14. As the executive pastry chef, he draws on his many years of experience at hotels and his high level of skill to create sweets such as the popular afternoon tea, strings parfaits, and buffets. He is also involved in the creation and supervision of desserts served at events and wedding receptions held in the banquet hall, as well as wedding cakes.
Starting with winning the Chairman's Award in the Small Crafts category at the Kanagawa Prefecture Pastry Competition in 2006, he has since gone on to win numerous awards, including the Chairman's Award in the Small Crafts category at the Japan Cake Show (2009), the Grand Prize in the Fresh Confections category at the Kiri Cream Cheese Competition (2011), and the Excellence Award at the American Dried Egg Sweets Bakery Chef Competition (2015). He has also won the Governor's Award three times at the Kanagawa Prefecture Pastry Competition. He has continued to develop numerous desserts with meticulous attention to detail, and won the Nikkei Restaurant Menu Grand Prix in 2013. Previously, he worked on various dessert projects in the pastry department of Hilton Tokyo, a mecca for sweets buffets. In April 2018, he was appointed Executive Pastry Chef at The Strings Hotel Tokyo InterContinental. Born in Yokohama, Kanagawa Prefecture in 1978.
 
Executive Chef and Food and Beverage Manager Olivier Rodriguez
 
Born in Toulouse, France. Started his career as a chef at the age of 18. Starting with "Don Camillo" in France, he honed his skills at restaurants such as "Le Chantecler" and "Les Jardins du Opera" and "Enoteca Pinchiorri" in Italy. In 2000 he came to Japan to take up a position at the Tokyo branch of "Enoteca Pinchiorri" and was appointed chef there in 2001. Since 2005, he has worked as chef at Signature, a restaurant at the Mandarin Oriental, Tokyo, since its opening. After receiving one Michelin star in 2007, he continued to hold the star for seven years until his retirement. Most recently, he served as owner-chef at the neo-bistro & ecle. Building on his French-trained techniques, he offers a light and airy cuisine unique to a chef from the South of France. He is highly acclaimed for his artistic technique and sensibility, harmonizing flavor, aroma, texture, and color in each dish. He has a deep knowledge of Japanese ingredients and is known for combining seasonal ingredients from Japan and abroad. In January 2019, he was appointed Executive Chef at The Strings Hotel Tokyo InterContinental. He oversees all food and beverage menus, and since January 2020, he has also served as Director of Food and Beverage.
