Leiden Pale Co., Ltd. will open "KURIHO," a Mont Blanc specialty shop dedicated to the deliciousness of Japanese chestnuts, in Jiyugaoka, Tokyo, on July 23, 2020. Business hours are 10:00 AM - 6:00 PM, with delivery coming soon.


At KURIHO, we offer four types of Mont Blanc and Japanese chestnut sweets, including the "Aged Unsweetened Mont Blanc," made with premium Japanese chestnuts from Matsuo Chestnut Farm, which are aged to a sugar content of over 30% using a unique method used in high-end French cuisine and traditional Japanese restaurants. Our chefs will also prepare the Mont Blanc right in front of you, so you can enjoy it for more than just the taste. Not only can you enjoy the aroma of carefully aged Japanese chestnuts and the moment when the chestnut paste is thinned to just 1mm, but our chef will also explain the history of the chestnuts used in our sweets and recommend ways to eat them. "Aged Unsweetened Mont Blanc"

This cake uses "Noto Chestnut Paste," a sugar-free paste with a sugar content of over 30 degrees, produced by Matsuo Chestnut Farm in Ishikawa Prefecture. The paste's fineness is adjusted to 1mm increments, resulting in a texture that melts in your mouth. This is a product that Kuriho is proud of, as it allows you to fully enjoy the chestnut aroma.

■About Matsuo Ritsuen's "Noto Chestnut Paste"
This unsweetened chestnut paste is made from Noto chestnuts with a sugar content of over 30, which are the result of the meticulous "aging" and "roasting" process at "Matsuo Ritsuen" in Ishikawa Prefecture.

[About aging]

Freshly picked chestnuts have a sugar content of only about 10, but by aging them at -1°C for 45 days, they become sweeter, exceeding 20 sugars. The "45-day aging" period was determined by Matsuo, who listened to the opinions of many customers and personally adjusted the aging period, temperature, wind strength, and other conditions. It is an aging period that he determined over 15 years, measuring the sugar content at each stage.

【About Roasting】
We pay particular attention to the amount of pressure applied, heating temperature, and heating time, and chestnuts roasted under these conditions are so sweet that they exceed a sugar content of 30. We do not compromise on the "fruit selection" process to eliminate fruit damaged by insects, and only the best chestnuts are used. We also pay close attention to temperature and humidity control in the work area, resulting in the highest quality roasted chestnuts.
