Minimal -Bean to Bar Chocolate-, a Japanese chocolate specialty store operated by Bace Co., Ltd., will begin accepting online reservations for authentic sweets starting in July. The recipes for the new sweets will be adjusted to recreate the taste of the store in the comfort of your own home across Japan, and the sweets will be delivered directly from the workshop where they are made by artisans. The first delivery in July will be a five-layer chocolate tart with a passion fruit aroma. A different chocolate sweet will be delivered each month for six consecutive months until December. Minimal's chocolates and sweets are crafted with sincerity and dedication, based on the motto "using the finest ingredients to maximize their aromas in a simple, careful way." Artisans who have honed their skills at three-star Italian restaurants, French M.O.F. pâtisseries, and top pâtisseries around the world work together to create the perfect chocolate and sweets. While the complex and delicate aromas of the ingredients are incredibly rich, the simplicity of the ingredients ensures a light, unobtrusive taste with a long, pleasant finish. The sweets we are offering this time also minimize the heavy flavor of butter and eggs, maximizing the diverse and rich aromas of the cocoa and chocolate to achieve a satisfying yet light taste. Furthermore, by eliminating methods and ingredients that are unsuitable for delivery and repeatedly adjusting recipes to maintain a fresh feel, you can now enjoy the same taste as in-store, right in the comfort of your own home. By adding Minimal chocolate to traditional sweets, you can enjoy a new chocolate sweet experience that is both classic and light and fragrant. To start with, we will be delivering new sweets every month for a limited period of six months until December. Sweets for August onwards are currently in development and include fondant au chocolat, opera, choux pastry and Mont Blanc, and will be announced on our official social media accounts as soon as they are decided (the photos of the above six sweets are for illustrative purposes only).

The first dessert in July will be a "Five-layered Chocolate Tart with the Scent of Passion Fruit." Made with chocolate featuring the nutty flavor of Nicaraguan cacao, the top layer is made with a water ganache that brings out the strong aroma of the chocolate itself while still maintaining a light taste. The refreshing flavor of passion fruit, the fragrant aroma of sable cookies, and the toasty texture of cacao nibs are added, while the ganache bottom layer, made with eggs and cream, balances the overall flavor, resulting in a refreshing and satisfying summer treat.
Pre-orders will begin on the online store from June 23rd, with deliveries scheduled to begin on July 17th.

Committed to our founding principle of "using the finest ingredients in a simple, careful way to maximize their aroma," our artisans, who have honed their skills at three-star Italian restaurants, French M.O.F. patisseries, and top patisseries around the world, work hard and collaboratively to create Minimal's chocolates and sweets. We conduct research and lectures on the fermentation and drying of the cacao beans locally, and work with cacao farmers to develop flavors that are worthy of high quality and high prices. Aiming for sustainable economic independence in the cacao industry, which still retains its plantation roots, we provide technical support and engage in fair, ethical trade. In 2019, we conducted cocoa research in Nicaragua as part of a JICA ODA feasibility study project.
