Until now, UN GRAIN has offered single-plate desserts and course meals in the eat-in space within the store, but with the desire to allow more people to enjoy our special desserts, a take-out only parfait has been created.
 
The first parfait is a rose-scented parfait with a beautiful pink gradation. Chef patissier Konbu has created this dish focusing on "fragrance", with the taste of early summer, featuring the gorgeous scent of rose, the bitterness of grapefruit, and the refreshing feeling of basil and mint. The rare edible rose that dances on top adds even more fragrance and elegance.

The edible rose petals used in "Parfum Parfait ~Rose~" are rare edible roses grown at Polepole Farm in Abiko City, Chiba Prefecture, without the use of pesticides, chemical fertilizers or herbicides. Polepole Farm's roses are grown without the use of chemical fertilizers, reducing the bitterness and astringency that are typical of roses and boasting an astonishingly powerful fragrance. In the same greenhouse, other plants such as bell peppers, komatsuna, chamomile, and legumes (which help fix nitrogen, which serves as fertilizer, in the soil) are planted, and weeds are also allowed to grow, creating a biodiverse natural environment.

Polepole Farm is a special subsidiary of the Teijin Group that provides a workplace and work that is considerate of people with disabilities. It continues to work as an example of "agricultural-welfare collaboration" that solves both issues of agriculture, which faces problems such as a shortage of workers and abandoned farmland, and welfare, which aims to provide diverse employment opportunities for people with disabilities. Konbu Tomonari ‖ Chef Patissier
 
 
Graduated from Tokyo Confectionery College in 2006, and in the same year based in Tokyo where he mastered the basics of French pastry at "Au Bon Vieux Temps"
In 2011 he won a prize in the Maple Sweets Contest
In 2012 he worked as sous chef pastry chef at "Pierre Hermé Salon de The" before moving to France. He has been in charge of desserts at the MOF (Meilleur Ouvrier de France) patisserie "Liédérées" in Aix-en-Provence, southern France, and the two-star restaurant "L'Atelier de Joël Robuchon".
In 2015, he joined "Un Grain" as sous-chef patissier.
He was appointed chef patissier in April 2019.

"UN GRAIN" means "a single seed" in French. Using ingredients lovingly grown from a single seed, each sweet is carefully crafted with the maker's thoughts in mind, and it is this sweet that will eventually be reborn as the seed of a new emotion within our customers. The name "UN GRAIN" was chosen with the hope of slowly and carefully nurturing the "single seed" that is "UN GRAIN" while proposing a fun and happy moment to each and every customer. This patisserie has an attached kitchen, and the eat-in space also hosts seasonal events.
 
■What are mignardises?
 
In French, mignardises refer to pinch-sized sweets that mean "elegance and elegance."
