Located near Hasedera Temple, Cacao Hanare is a detached branch of the Komachi main store of Maison Cacao, a specialty aromatic raw chocolate shop originating in Kamakura. By incorporating seasonal events and in-season ingredients, the shop expresses a uniquely Japanese aesthetic through minimalist design, exploring ways to enjoy chocolate throughout the seasons.
This time, we're offering a Japanese chocolate confectionery paired with tea, made with the brand's signature Colombian chocolate. This fall, we collaborated with Obusedo to create the ultimate chestnut confection. Located in Obuse, Nagano Prefecture, known for its chestnuts, the renowned shop has been creating Japanese and Western-style chestnut confections for 100 years, using generous amounts of chestnut paste carefully cultivated and prepared. Starting September 1st, three sweets created in collaboration with Obusedo will be available for a limited time: Hanare Terrine, Hanare Monaka, and Nama Dorayaki.

This Japanese chestnut chocolate terrine has been created in pursuit of the perfect marriage between Obusedo's special chestnut paste and Colombian chocolate. The chestnut paste is made using Japanese chestnuts harvested in the fall while they are still fresh, and is prepared using only chestnuts and sugar using the same method as when the company was founded. The smooth chestnut paste, which locks in the natural flavor of the chestnuts, is combined with Colombian caramel-flavored milk chocolate to bring out the gentle and deep flavor of the chestnuts themselves. After repeated trial and error, this product has been carefully crafted to achieve the ultimate melt-in-your-mouth texture and chestnut flavor. Enjoy the lingering combination of chestnut and chocolate.

The packaging uses luxurious washi paper from Taki Paper Mill, which has been producing Echizen washi paper in Echizen City, Fukui Prefecture for approximately 150 years. The original design, inspired by Obusedo and Cacao Hanare, was created by Taki Paper Mill, which explores new possibilities for washi paper by combining it with modern design while preserving traditional techniques. As each product is handmade, the design is unique.

The chewy pastry, featuring the family crests of both the Obusedo and Cacao Hanare brands, is filled with an airy cream made from a blend of two types of Colombian chocolate and Obusedo's Japanese chestnuts. To bring out the natural umami of the chestnuts, the candied chestnuts are carefully crafted for their sweetness and texture, and then hidden inside a smooth chestnut paste.

This dorayaki is made using hon mirin, which has a deep sweetness and complex flavor, and is slowly baked on a copper plate, resulting in a four-layer interior. This fresh dorayaki pancake is made with homemade chocolate paste, combining Colombian bitter chocolate with the gorgeous aroma of fragrant bean paste from Hokkaido, and topped with refreshing fresh cream made with cacao fruit vinegar. It is topped with Obusedo's special candied Japanese chestnuts and topped with smooth chestnut paste, creating a Mont Blanc-style treat.
