From October 3rd to November 25th, Hoshino Resorts Karuizawa Breston Court will be offering the "Menu Dessert Wine Pairing" (6,500 yen), a sweet and wine pairing experience.

The "Menu Dessert Wine Pairing" features three desserts made with seasonal ingredients unique to late autumn, when the mountains shine golden, such as chestnuts, walnuts, and apples, paired with a champagne cocktail or dessert wine to complement each. One of the desserts on offer this time, "Autumn Fragrance (Pear and Brioche)," features a lightly baked pear that retains its crunchy texture, topped with smooth pear cream, a purée that captures the flavor of the ingredients, and a thin, crunchy candy. This is paired with Diévol Valois Blanc de Blancs, a champagne that perfectly matches the lightness of the cream and the texture of the candy. For a different flavor experience, try pouring pear sauce over the champagne. "Chestnut Picking (Chestnuts in Various Forms)" is a gorgeous dish featuring chestnut paste, roasted chestnut ice cream, and a thin maple-leaf tuile. It's accented with chili meringue and a compote of "Nakano no Kirameki" apples, known for their refreshing, bright red flesh. The pairing wine is Obuse Winery's "Amarone Type 2004," characterized by its warm sweetness. "Gifts from the Forest (Small Desserts Decorating the Trees)" features 10 mignardises combining ingredients unique to Shinshu, such as buckwheat noodles, walnuts, and Japanese pepper. The culmination of traditional French confectionery techniques, including tarts, caramels, and financiers, creates a gorgeous climax to the course. The wine is Yamabe Winery's "Vin de Soleil Saint-Mignon." This dessert wine has a high sugar content, so you can enjoy it slowly while the course finishes.

You can also enjoy just the three-item sweets course (3,500 yen), or you can order "Chestnut Picking" (1,200 yen) as a single item. All prices are exclusive of tax and service charge.
