
Frederic Cassel's monthly sweets series "INSPIRATION" will introduce chestnut sweets exclusive to January. They will be available from January 3rd to 31st, 2017.
Focusing on the ingredients, this collection continues to explore the depth of French pastries by not only showcasing the flavors of the ingredients themselves but also by creating gradations of flavor between the ingredients. The new "Mille-feuille Finger Marron" (700 yen) is a caramelized feuilletage layered with chestnut cream, pear coulis, and pear mascarpone cream, and topped with white chocolate.
"Petit Merveille Marron Lychee" (600 yen) is a meringue petit gateau topped with chestnut chantilly and lychee compote, enveloped in white chocolate. The macaron "Saint Honore Marron Mandarin" (700 yen) is a cream-filled choux pastry topped with mandarin cream, crushed marron glacés, and Chantilly cream. In addition, "Marron Glace" (6 pieces for 3,000 yen, 10 pieces for 4,800 yen) made with large Italian chestnuts will also be on sale.
