
"Inspiration," a sweets shop run by Frédéric Cassel that develops sweets based on a monthly theme, will be introducing four sweets themed around "agrumes (citrus fruits)" in October.
"Mille-feuille Finger Yuzu" (700 yen) combines caramelized feuilletage with a delicate yuzu-scented crémeux and bitter orange flower ganache montée, and is available in a size that allows you to pick it up with your hands and enjoy all the layers at once. "Saint Honore Citron Bergamot" (700 yen) is a cream-filled choux layered with lemon cream, bergamot jelly, and lemon chantilly cream.
Also available for the first time at the store are four types of sweets: "Petite Merveilles Jasmine Pamplemousse" (3 pieces/600 yen), a combination of meringue, jasmine cream, and pink grapefruit confit wrapped in white chocolate, and "Macaron Kumquat" (240 yen), a macaron with a subtle kumquat scent and filled with white chocolate ganache.
