After working as a pastry chef in France for 12 years, Yoshinori Asami opened Patisserie Yoshinori Asami in Sugamo, Tokyo, after returning to Japan.

There are pictures of storks on the shop sign and throughout the store. When asked why, he said, "In the Alsace region where I stayed while studying in France, storks are everywhere. They are a natural part of the everyday scenery. That's why I made them the symbol of my shop." The Alsace region, located in northern France, has long been known as an area producing high-quality ingredients and has cultivated a rich food culture.


In Northern Europe, where Christmas has a long history, Christmas markets line the streets at this time of year, and it's customary to eat stollen and saintly pain d'épices at every home. This custom inspired the creation of our December parfait, the "Saint Nicolas Parfait" (1,380 yen). "The key is the pain d'épices, which is seasoned with spices such as cinnamon, anise, cardamom and nutmeg. This is a traditional baked good from the Alsace region, and is an essential flavor for Christmas. We combined two types of ice cream, pain d'épices and pistachio, with whipped cream infused with bergamot aroma and salted sable. We also put frozen grapes at the bottom and sprinkled freeze-dried raspberries on top for accent. To finish, garnish with Saint-Nicolas pain d'épices and it's complete," says Asami.
