
BREAD LAB, established in August this year by members of the Aoyama Bread Festival, a marketplace that brings together bakeries and bread lovers, will release the book "CRAFT BAKERIES - Quest for Bread, Wheat Adventures, The Mystery of Fermentation" on November 21st. To commemorate this, a publication event will be held at the Aoyama Farmers Market on November 21st and 22nd.
"CRAFT BAKERIES - Quest for Bread, Wheat Adventures, The Mystery of Fermentation" introduces craft bakeries from Japan and abroad. Rather than by store location, the book categorizes each store by its unique characteristics, such as "Focused on wheat" or "Focused on yeast." The book also explores the mysteries of fermentation in various foods, including bread, and the ingredients that affect bread's flavor.
The event celebrating the book's release will feature an advance sale of "CRAFT BAKERIES - Quest for Bread, Wheat Adventures, The Mystery of Fermentation" ahead of its nationwide release in early December. A special bread set will also be released, which will include five carefully selected types of bread, a tote bag with the BLEAD LAB logo, and the book, so that you can enjoy the book while tasting the bread featured in the book. There will also be a bread market where approximately 25 stores will be selling bread and bread accompaniments. A publication celebration party will also be held from 2pm to 4pm on the 22nd.
