The "Night Parfait - Japanese Sweets" is a seasonal anmitsu parfait that can be enjoyed in the evenings, combining fresh seasonal fruit such as pears and persimmons with Japanese ingredients such as homemade sake lees ice cream and yuzu-flavored white bean paste. The chef has carefully selected Japanese ingredients, with the keyword "fermentation" in mind, and has created ice cream using sake lees and mousse made from fromage blanc (cheese) and wasanbon sugar. Decorated to resemble the greenery of an illuminated garden, this is a soothing dessert to enjoy as a finale to your drink.
