Sébastien Bouillet introduces chocolate mint flavor for its seasonal Macaron du Moumont

Jul 10, 2020
Enjoy the popular seasonal flavors of Macaron du Moment. This season, we've added a refreshing "Mint" flavor. We've also updated our macaron rusks to be more satisfying in size.

Macaron du Moment: A refreshing seasonal flavor “Mint”

Macaron du Moment's newest seasonal flavor is "Mint." We've focused on allowing you to enjoy the aroma and flavor of mint. When making the white chocolate-based ganache, we boil the cream and add finely chopped mint to extract the refreshing mint flavor and aroma. This macaron combines the texture and aroma of cocoa nibs with the refreshing taste of mint.

These macarons, which are also popular at the Lyon flagship store, are packed with Sébastien's attention to detail

Macarons are a popular item available at the Lyon flagship store. We will introduce the key points of Sébastien Bouillet's macarons.

◆The dough is baked with home-ground almonds
The key is the fragrant macaron dough, baked with home-ground almonds. Almonds have different flavors and tastes depending on how coarsely they are ground. Grinding them to just the right size adds a fragrant aroma and richness to the macaron dough.

◆Sandwiched with jam or ganache
The macarons are sandwiched with bitter chocolate ganache or fruit jam such as raspberry or blackcurrant. The ganache has a smooth texture, while the jam allows you to enjoy the flavors that bring out the characteristics of the fruit.

◆The variety possible because each one is handmade is also an attraction
We offer a total of 18 types of macarons, including macarons and premium macarons. Another attraction is the ability to enjoy a variety of flavors to suit the season. Each macaron is handmade, so we offer many variations to suit the season.

Renewed macaron rusk made with macaron dough

As macarons are handmade, it is inevitable that some may not be the correct size due to the manufacturing process. Rather than throwing away those macarons, we have transformed them into a delicious treat called "Macaron Rusk." The macaron dough is slowly baked in the oven until crispy. A touch of salt brings out the sweetness. This hidden popular item combines deliciousness that will put a smile on your face with efforts to reduce food waste. The macaron rusk has been revamped from 60g to a larger 120g! The switch will be made gradually from mid-July. *Availability may vary by store. Macaron Rusk Tax included: 648 yen (base price: 600 yen) Please come and enjoy the taste of our popular macarons, also available at our Lyon flagship store.
