"Peche Vervain" is a new cake with a cute, eye-catching peach-inspired shape. It combines soft peach cream with crème brûlée made with vervain (lemon verbena), a herbal tea beloved by the French, and juicy peach confit. The refreshing marriage of juicy peach flavor and the elegant flavor of vervain is easy to eat even on hot days and perfect for summer. The cinnamon-flavored sable cookies not only add texture but also flavor.
 
While pairing it with crisp iced tea is recommended, Aoki's top recommendation is pairing it with champagne. Five types of champagne are available in the salons of the Marunouchi and Tokyo Midtown stores. Aoki's favorite pairing is rosé, which further brings out the fruity flavor of the peach.
