Congee is a staple of Asian breakfasts. Oyster Bar Wharf, a restaurant from Singapore, serves this delicious congee every morning. It's gentle on the stomach and said to be good for warding off colds. Located inside NEWoMan SHINJUKU, directly connected to Shinjuku Station, it's easy to stop by on your way to work. Breakfast starts at 7:00 AM, making it a convenient spot for soothing a hangover. There are three types of congee: "A. Slow-Simmered Small Prawns Morning Congee" (730 yen), "B. Hyogo Prefecture Oysters and Boiled Whitebait Morning Congee" (780 yen), and "C. North Sea Whelk and Shrimp Morning Congee" (880 yen). Since this is an oyster bar, I chose option B, which includes the shop's signature oyster tsukudani (simmered oysters).

"A. Slowly Simmered Oyster Congee (730 yen)"

"For our oyster tsukudani, we use oysters harvested from Sakae Bay in Ako City, Hyogo Prefecture. Oysters harvested in Sakae Bay, with its crystal clear waters and abundant phytoplankton, are packed with flavor. The congee is well seasoned with oyster broth, so it's delicious even without any condiments," says Manager Ukegaya.

The delicious aroma of sesame oil and steam rising from the congee bowl are sure to whet your appetite. The best part is customizing your porridge by adding the coriander, fried bread, and pickled mustard greens, which are served on separate plates, to your liking.

As I took a bite, mixing in the whitebait tossed in sesame oil, I discovered chunks of oyster tsukudani (simmered in soy sauce and sugar), each one a satisfyingly large piece. The oysters, simmered in a sweet and spicy sauce with soy sauce and sugar, were so magnificent I almost regretted breaking them up. Cutting them into bite-sized pieces and eating them with the porridge, the refreshing taste of the porridge and the rich oyster flavor blended together in my mouth, creating a luxurious feeling. The aroma of the coriander, the saltiness of the pickled mustard greens, and the crispy texture of the fried bread were enjoyed alternately, making it impossible to stop holding the lotus leaf. Moreover, as I continued to eat, my body gradually warmed up, warming up until I was beginning to sweat. The porridge thoroughly simmered in my stomach, and I felt like my body was waking up from the inside out.

"We have many overseas customers for breakfast, and we have a wide range of age groups, from children to the elderly. We're open until 4am, so please come and enjoy your oysters with Singapore's draft Tiger Beer, which is only available at a few stores in Tokyo," says Ukigaya.
