In 2019, he opened the world's first bean-to-bar white chocolate brand, "Chocolatier Palet d'Or Blanc." He handles over 10 tons of chocolate per year, and as a chocolatier, he consistently creates everything from cocoa beans to bonbons. His exquisite chocolates, crafted with a focus on the natural taste and aroma of cocoa, have garnered widespread attention both in Japan and overseas. This shop is the first of its kind in the world to offer a wide range of products, including white chocolate made with homemade cocoa butter, as well as baked goods, drinks, and soft-serve ice cream made from the homemade cocoa powder produced at the same time.
