Jan 20, 2017

Frédéric Cassel has unveiled its February inspiration collection.

Frédéric Cassel's inspiration suggestions change every month. February's suggestions include four chocolate lines. They'll be on sale from February 1st to 28th.

The "Mille-feuille Finger Chocolat" (700 yen) is a combination of caramelized feuilletage, feuilletine made with Gruyède cocoa, a fragrant ganache montée made with Blue Mountain chocolate, and a thin layer of dark chocolate.

The "Saint Honore Chocolat" (700 yen) is a cream-filled choux pastry topped with smooth cream made with Coeur de Guanara and Chantilly cream.

The "Petit Merveilles Chocolat" (3 pieces/600 yen) is made with cocoa from the Loma Sotavento farm in the Dominican Republic, and topped with a delicately cocoa-scented chocolate ganache. In addition, "Macaron Chocolat Tonka" (240 yen) will be available, which is scented with tonka beans.
