Black truffles, a luxury ingredient that is in season from December to March, are considered one of the world's three great delicacies, alongside caviar and foie gras, and are also known as the "black diamond." To fully enjoy their noble fragrance and seasonal flavor, we have prepared a limited-time dinner course in which five of the six dishes use black truffles.

Lobster carpaccio, Jerusalem artichoke bavarois with the aroma of black truffles and seasonal vegetables in a vinaigrette marinade
Lobster carpaccio and Jerusalem artichoke bavarois, known in French as "topinambourg", infused with the mellow aroma of black truffles. Served with a flavorful vin jaune sauce.

Golden Black Truffle and Celery Root Soufflé A feast of black truffle sauce and mellow white wine sauce
Black truffle, gently cooked celery root confit, and smooth red sea bream mousse are wrapped in gold leaf and made into a soufflé. A luxurious dish finished like a "golden egg." Served with two sauces: a fragrant and rich black truffle sauce and a white wine sauce with just the right amount of acidity.
 
*Meaning of the emperor's "golden egg"
A dish created as a homage to the "Imperial Egg", a famous work by goldsmith Faberge that was presented to the Russian emperor.

What is Tour d'Argent?
 
 
A history that began like a fairy tale. Approximately 400 years ago, an inn located on the Île Saint-Louis on the Seine River in the heart of Paris named its inn "Tour d'Argent" (Silver Tower) after the glittering silver mica-adorned Château de Tournelle, which could be seen from the inn's location.
