Modern French "Collage" Embodiment (5 dishes)
Beautiful and innovative modern French cuisine that combines delicate French techniques with the originality of head chef Matsunaga Shintaro. Available only during cherry blossom season, the course dinner, made with ingredients carefully selected by the chef, is an exquisite menu that pursues the art of presentation and food pairings. The menu includes a mille-feuille of soft and fresh spring cabbage, wakame seaweed, and kelp-cured scallops, along with seasonal whitebait and riveau de veau, and a combination of spring-caught sakura shrimp and Awaodori chicken, plus a colorfully presented cheese terrine with a unique texture for dessert. Japanese Cuisine "Kazahana" - Sea Bream Tea Set Meal
Based on traditional Japanese cuisine, Executive Chef Katsuhiro Tamura continues to offer delicious dishes that incorporate both seasonal and non-Japanese ingredients. He has prepared a cherry blossom-themed lunch, the "Sea Bream Tea Set Meal." He has carefully selected ingredients that are perfect for this time of year, when the cherry blossoms are in full bloom. Start with the sliced cherry snapper sashimi as is, then place the other half on top of rice and pour over the tea broth, flavored with sesame soy sauce and roasted green tea, to your liking, for a different flavor experience. The sea bream tea porridge is topped with cherry blossom flowers and leaves, and for dessert, a cherry blossom-scented gateau au chocolat is served. This seasonal plan allows you to fully enjoy the aromas of spring.

Enjoy the aroma and flavor of cherry blossom flowers and leaves, brought out by the chef's diverse techniques and creative sensibility, along with the ingredients. The "Hong Kong Steamed Dim Sum" features abalone, chicken, and other ingredients wrapped in cherry blossom leaves and yuba (bean curd skin), reminiscent of sakura mochi (cherry blossom rice cakes). This is a typical China Blue dish that incorporates Japanese elements into Chinese cuisine. The Sakura Course is for two people.
