
From March 15th to early April, Frederic Cassel will be selling its new "SAKURA" collection, symbolizing the beauty of spring in Japan.
The "Petit Merveilles SAKURA" (600 yen), which looks like jewelry, features crispy meringue and the light sweetness of Chantilly cream, which has a delicate cherry blossom scent with an alluring tonka bean aroma. The tartness of cherries adds a nice accent.
The three types available are "Cake SAKURA" (300 yen), baked with a rich, fragrant buttery dough, accented with the saltiness of cherry blossom paste and the tartness of raspberries, and "Paris-Brest SAKURA" (700 yen), an eclair with two layers of delicate cherry blossom-scented Chantilly cream and custard cream.
