Suiran, a Luxury Collection Hotel, Kyoto (located in Arashiyama, Kyoto) will launch the "Matataki" accommodation plan from December 1, 2021, offering a unique dining experience at Suiran. Guests can enjoy an innovative dinner at the hotel's restaurant, Kyo Suiran, paired with sake that they have blended themselves at Tsuki no Katsura, a long-established sake brewery founded in 1675. Additionally, for nine days starting December 10, the limited-time "BAR Tsuki no Katsura" will be open, where guests can savor newly released sake while taking in the illuminated Arashiyama scenery that stretches out before them.

With this plan, after arriving at the hotel, you will first be taken to Tsuki no Katsura in the hotel's hire car. You will be guided around the brewery while being given an explanation about the history of sake in Fushimi, Kyoto. After gaining insight, you will create your own original sake through tastings. The sake to be blended will include four types boasting distinctive flavors, including Tsuki no Katsura's original nigori sake, as well as junmai ginjo sake and junmai daiginjo sake. With advice from 14th-generation head of the family, Tokubei Masuda, you will be able to layer flavors to create your own favorite sake. Finally, guests will complete the bottle label with their own calligraphy, creating a one-of-a-kind bottle of sake.
For dinner, guests can enjoy their precious sake at Kyo Suiran, a restaurant housed in a mansion built over 120 years ago. The hotel's Executive Chef, Yoshio Matsuse, will offer a kaiseki banquet menu infused with the essence of French cuisine. Enjoy dishes that capture the fleeting sparkle of the season, such as the signature dish "Foie Gras Pickled in Sake Lees" and seasonal Kyoto ingredients, paired with your one-of-a-kind sake.
In addition, from December 10th to 18th, "BAR Tsuki no Katsura" will be opening at the cafe Saryo Hassui along the Hozu River. Guests can enjoy this year's new sake, the revamped "Nigori," and other sake cocktails recommended by Tokubei Masuda.

Founded in 1675, Tsuki no Katsura is one of the oldest sake breweries in Fushimi. It is the original brewer of "Nigori sake" and "Aged sake."
