
"Inspiration," a sweets collection by Frederic Cassel based on a monthly theme, has introduced three new sweets for August and September themed around "vanilla," Frederic Cassel's specialty.
"Mille-feuille Finger Vanille Mexico" (778 yen including tax) is a mille-feuille finger made with vanilla from Mexico, the birthplace of vanilla, known for its wild aroma. It combines a chewy biscuit with white chocolate vanilla cream and a crispy feuilletage (puff pastry) with mascarpone cream rich in the aroma of vanilla. The three items on sale include the "Macaron Vanille Madagascar" (260 yen, tax included), which combines an almond cream-based ganache with Madagascar vanilla, and the "Tarte Vanille Uganda" (648 yen, tax included), which features smooth white chocolate vanilla cream encased in a fragrant Ugandan vanilla mascarpone cream. Other autumn-only sweets planned for release include the "Japanese Chestnut Paris-Brest" (778 yen, tax included), "Châtaigne" (486 yen, tax included), and "Mont Blanc" (864 yen, tax included). Also available on September 14th is the traditional "Gâteau Bâteau" (2,160 yen, tax included), a pastry from Cassel's hometown in the Picardy region of northern France. Made with plenty of butter and eggs, it's fluffy and fluffy, and Cassel's signature style is to eat it for breakfast with jam.
