Sage & Fennel, a California-based slow fast food restaurant (5-19-6 Hiroo, Shibuya-ku, Tokyo), will open in Hiroo, Tokyo on November 2nd.
The restaurant offers safe and secure "slow food" that reexamines the traditional foods and ingredients of each region and takes into consideration the producers, farmers, and the health benefits of eating it, providing it in a fast-food format suited to urban lifestyles and proposing the joy of eating. Chef Yoshinori Funayama has developed a variety of delicious and healthy dishes inspired by California's slow fast food.
The plate menu allows customers to choose from 12 to 14 dishes, including soups made with seasonal vegetables, hot dishes such as slow-cooked meats and stews cut fresh, cold dishes such as salads made with quinoa and chickpeas, and a drink menu including coffee and beer. From the opening until November 7th, menu items include "Carrot and Raisin Rapée," "Atelier Nomade's Daikon and Chicken Breast Marinade," and "Moroccan-Style Stewed Daisen Chicken." Other items available include California snacks, wine, and a special chia seed pudding for dessert. Starting in mid-November, a chef's plate featuring the day's freshest ingredients will also be available.

The store was designed by Imazu Yasuo of ninkipen!, a first-class architectural firm based in Osaka. The simple design, featuring white and gray accents of gold, highlights the colorful dishes displayed in the display cases.

The two-story building seats 32. There is also an open cafe space with a lead hook, perfect for bringing your dog. In addition to dine-in, takeout, and catering are available.
