Today, Akira Horiuchi of eyehight, a brand PR and planning company, recommends the dorayaki from Usagiya. Founded in 1913, Usagiya, a Japanese confectionery shop in Ueno, Tokyo, boasts a history of nearly 100 years and was named after its founder, Kisaku Taniguchi, who was born in the year of the rabbit. Dorayaki first appeared in the early Showa era, but its deliciousness quickly gained a reputation, making it a renowned dorayaki shop. In addition to Ueno, the shop also has locations in Asagaya and Nihonbashi.
Just as Horiuchi says, "It's filled with lots of bean paste, so it's heavy and substantial, and I think its slightly misshapen shape is also very rustic and lovely," Usagiya's dorayaki is characterized by its generously and generously filled smooth bean paste. The dorayaki is then individually wrapped by artisans in a delicate skin that has been toasted to a light brown color. This is a dish where you can feel the delicious, meticulous calculations that went into every detail, from the way it is toasted to bring out the crispness and the subtle, gentle flavor of honey that brings out the sweetness of the bean paste.
