Starting January 1, 2021, Yokohama Bay Sheraton Hotel & Towers will be selling "Exquisite Shortcake," a monthly rotating shortcake created by Executive Pastry Chef Shuji Muto. The shortcake is a perennial favorite at pastry shop "Dole." This first-time offering of "Exquisite Shortcake" features not only seasonal premium domestic fruits, but also the Executive Pastry Chef's meticulous selection of every ingredient, from the fresh cream and eggs in the sponge cake—the key to the shortcake's flavor—to create a monthly rotating series. The first in the series celebrates the start of the new year with the creation of the "Exquisite Strawberry Shortcake," a luxurious treat made with only the finest, carefully selected strawberries: "Amaou" strawberries from JA Fukuoka Ooki in Fukuoka Prefecture, known for their mellow aroma, rich sweetness, and juicy flesh, and "Pearl White" strawberries from Shiroishi Town in Saga Prefecture, a delicious white variety that is not just eye-catching. The chef also uses red eggs from Odate Farm in Akita Prefecture and his exquisite genoise (sponge cake), crafted with his own masterful techniques, boasts a delicate, moist texture. The combination of this cake with crème chantilly, made with 100% raw milk from the Konsen region of Hokkaido, boasts a rich, full-bodied flavor, creates a truly exquisite taste. The result is a perfectly balanced shortcake that doesn't overpower the flavor of the high-quality seasonal fruits.
