
"BEE my HONEY," a pop-up shop selling honey, is open until November 18th at "CHALIE VICE" on the 8th floor of Isetan Men's Building.
This time, the shop's focus is on honey. According to the sales floor manager, "This project started with the idea that it would be interesting if men were to have a particular interest in honey. Traditionally, honey has only been used as a spread or drizzle, but from now on, proposing it as a seasoning from a male perspective is in line with the origins of Charlie's concept, as he loves cooking."
The honey sold is from the "BEE my HONEY" brand, grown by Shigeaki Kondo of Kondo Bee Farm in Oita Prefecture, which has been carrying on traditional regional beekeeping since its founding in 1909. Regional beekeeping involves cultivating your own hives and traveling as far south as Kyushu and as far north as Hokkaido to harvest honey in time with the flowering season.
Vinegar Honey (1,112 yen) is a honey vinegar made with domestically grown flower honey, which captures the Japanese seasons, and Fuji vinegar from Iio Brewery. It can be diluted with water or carbonated water, or added to beer for a unique beer cocktail. You can also use it as sushi vinegar by adding 1/10 the amount of salt, or easily make a French dressing by adding equal parts oil and salt.
Herb Honey (834 yen) is made with domestically grown flower honey, which captures the Japanese seasons, infused with dill, lemongrass, and mint from Oita Prefecture. This honey, with its refreshing dill aroma, enhances dishes by dipping bread in it, using it as a marinade, or simply drizzling it on sautéed fish, cheese, or prosciutto.
The Adult Lemonade (1,204 yen) is a honey lemonade flavored with fruity Vietnamese lychee honey, domestic lemons, and several carefully selected spices. It can be mixed with water or carbonated water, or paired with beer or sparkling wine for a thoughtful aperitif. The shop also sells Salt Honey (834 yen), Pepper Honey (834 yen), and Cinnamon Honey (834 yen).
Charlie Weiss is a character created as part of a project for "Tokyo Kaigi," a program on BS Fuji that airs every Saturday at midnight, where Koyama Kundo talks with guests. His profile, including his age and birthplace, is shrouded in mystery. A traveler, he has been to many countries, been impressed by their cultures and customs, and honed his tastes from the people he met there, making him a "master of stylish pastime" with a wide range of interests, including music, photography, and cooking.
To commemorate the 10th anniversary of the remodeling of the men's building in September 2013, a select shop called "THE GALLERY by CHALIE VICE" was opened on the 8th floor of the building. The shop showcases Charlie Weiss's favorite "high-sense items" in the form of men's clothing and miscellaneous goods.
