Beauty Connection Ginza will begin offering a new menu using seasonal melons at its fruit course specialty store, Fruit Salon, on the second floor of the facility from July 1 to August 3, 2020.

Our restaurant offers full course menus with attention to detail, featuring seasonal fruits, and our new July menu is a four-course meal that makes luxurious use of domestically grown melon, which is in season now and is also known as the "king of summer fruits." Melon, with its juicy, elegant sweetness and plentiful nutrients, has been completed as a full course of refreshing fruit sweets. Its rich, full aroma and fresh texture make it a noble taste worthy of its title as the king of fruits.

The third dish, a gorgeously colored and beautiful parfait, catches the eye and uses a sorbet made from Higo green melon, known for its soft flesh and high sugar content. The dish is enhanced by unique supporting ingredients such as jasmine jelly and sparkling wine granita, which bring out the sweet and juicy flavor of the melon. The intentionally left-over space in the glass allows the ingredients to blend as you eat, allowing you to enjoy changes in taste and texture right up to the last bite. This 90-minute full course, available by reservation only, satisfies your senses with sights, tastes and more, creating a special summer experience.

"Amuse-bouche"
Enjoy with carefully selected dried fruits and bite-sized baked goods.


1st. plate 『Terrine』
A nougat glacé terrine filled with caramelised almonds and dried fruit, paired with instant melon compote and served with a blackcurrant and yogurt sauce.


2nd. plate 『Gazpacho』
We have prepared the classic summer Spanish soup ``gazpacho'', combining red-fleshed melon and several types of vegetables. Enjoy it with a Parmesan cheese coca (thin pastry).


3rd plate 『Parfait
A parfait that allows you to enjoy the aroma of Higo green melon sorbet combined with jasmine gelato. The unique characteristics of each ingredient are enhanced by the sparkling wine granita and mint jelly.


『After-meal Drinks』
For your after-meal drink, you can choose from Maruyama Coffee's original blend coffee, black tea, or herbal tea.


BIEN-TRE PÂTISSERIE Owner: Baba Maiko


Born in Kyoto Prefecture in 1977. After graduating from university, she worked as an interpreter overseas before returning to Japan and entering the food and beverage industry. She was part of the launch team for the Spanish restaurant "Restaurant Sant Pau" in Tokyo, where she served as the chef patissier. She later helped launch patisseries and cafes before going independent.
In 2010, she opened the sweets and parfait shop "BIEN-TRE PÂTISSERIE", and in 2017 opened the gelato and bakery shop "FLOTO". Sweets that make the most of the natural flavors of the ingredients are gaining popularity.

In addition, as a current COVID-19 prevention measure, the layout has been changed to ensure that there is a distance of at least 2 meters between groups so that customers do not sit face-to-face. Regarding payment, we only accept cashless payments.
