MI Food Style Co., Ltd., a group company of Mitsukoshi Isetan Holdings Ltd. and operator of 16 supermarkets (Queens Isetan) mainly in the Tokyo metropolitan area, will launch two new products, "Smooth and Thick Pudding" and "Classic Pudding," on July 1st.
Queens Isetan is focusing on developing new sweets in response to customer survey requests for a more extensive sweets selection. The "Crispy Butter Custard Cream Puff," released in March 2020, proved so popular that approximately 10,000 units were sold in just 20 days. This time, for their next project, they decided to try their hand at developing an original version of pudding, a perennial favorite among sweets.
In order to create a pudding that is unique to Queens Isetan, we have used no preservatives, coagulants, or colorings, and have made it with simple ingredients: eggs, milk, and sugar. The main ingredient, eggs, are fresh, from farms, and no processed liquid eggs are used, so the natural egg flavor fills your mouth with every bite. The caramel is also served separately, so you can add as much as you like. The egg flavor, natural sweetness, and the bitter caramel create an excellent combination.
Furthermore, since pudding preferences are divided into "smooth" and "firm," we developed two types of pudding at the same time, hoping to satisfy both sets of customers. By controlling the steaming time while keeping the ingredients largely the same, we have created a smooth pudding with a gentle texture and a firm pudding reminiscent of old-fashioned coffee shops. You can add whipped cream or fruit to either pudding to your liking, giving you a cafe-like feeling at home.

The eggs, the star ingredient of this pudding, are made with freshly cracked eggs from a poultry farm, in cooperation with producers of "Shimane Kometamago," Queens Isetan's private brand. Creating two textures—smooth and firm—without using coagulants was extremely challenging, but with the cooperation of producers with extensive knowledge of egg characteristics, we were able to fine-tune the steaming time multiple times and successfully create two different pudding varieties. Furthermore, despite not using any preservatives, the puddings have a shelf life of 14 days from the date of production. By steaming them fully filled, the containers are designed to minimize exposure to air, not only ensuring deliciousness but also reducing food waste.
Furthermore, based on internal feedback that "it tastes better if the caramel is added after the fact!", we decided to serve the caramel separately, a somewhat unusual addition. You can adjust the amount of caramel to your liking. This original pudding was created with the concepts of "focusing on egg flavor" and "restricting the use of additives."
