A new menu using luxurious mangoes from Fruit Salon, a reservation-only fruit full-course restaurant

Beauty Connection Ginza has suspended operations since April 8 due to the impact of the new coronavirus. However, from June 1 to June 30, 2020, the fruit course specialty store "Fruit Salon" on the second floor of the facility will begin offering a new menu using seasonal mangoes.

Following on from pears, citrus fruits, and strawberries, the new menu features four dishes made with luxurious mangoes from Miyazaki Prefecture, which are in season now. With their mellow aroma and refreshing taste, this vitamin-packed, nutritious mango will be served in a variety of delicious flavors. The rich sweetness and rich texture of the mango spreads refreshingly in your mouth, creating a full course of fruit sweets that will have you feeling the early summer from the very first dish. The third dish, a jewel-like parfait, catches your eye, featuring a unique blend of ingredients centered around mango gelato, creating a one-of-a-kind harmony. As you eat, the ingredients on top and bottom gradually blend together in the deliberately created space in the glass, allowing you to enjoy the ever-changing flavors. Enjoy a luxurious 90-minute full course, savoring the sights, tastings, and all your senses.

A key nutrient in mangoes is β-carotene, which contains approximately 3.5 times* the amount found in regular fruit. β-carotene is a nutrient that converts into vitamin A as needed by the body. A terrine of domestic mango and white wine jelly, served with a banana and lemongrass sauce. The faint scent of coconut enhances the pleasant early summer flavor.

A light kadaif tart combined with domestic mango and seasonal citrus fruits. Enjoy the contrast of sweet and salty flavors from the combination of three types of cheese: cream cheese, fromage blanc, and mimolette.

Mango gelato made with plenty of domestic mangoes and refreshing yogurt gelato are combined with ginger granita and seasonal fruits.

Along with carefully selected dried fruits and bite-sized baked goods, you can choose your after-meal drink from Maruyama Coffee's original blend coffee, black tea, or herbal tea.


[BIEN-TRE PÂTISSERIE Owner, Maiko Baba]


Born in Kyoto Prefecture in 1977. After graduating from university, she worked as an interpreter overseas before returning to Japan and entering the food and beverage industry. She was part of the launch team of the Spanish restaurant "Restaurant Sant Pau" in Tokyo, where she served as the chef patissier. She subsequently worked in the launch of patisseries and cafes before going independent. In 2010, she opened the sweets and parfait shop "BIEN-TRE PÂTISSERIE", and in 2017 opened the gelato and bakery shop "FLOTO". Sweets that make the most of the natural flavors of the ingredients are gaining popularity.
